I have a feeling that she already had a memory problem even younger. Based on a flashback, she saved Karl as a child and forgot him, seeing as both of them have a house fire memory. Or she may have known sensitive information regarding Karl and the King.
Tartien had commissioned a portrait, rejected but Lumiere had given in due to blackmail when Landers came personally. That’s why she went into a panic seeing him visit with the yellow flowers and asking if she remembered. He was testing her.
Lumiere decided that her knowing all that information made Karl vulnerable so she ordered Tamia to make her forget Karl and broke up with him to keep her safe. Obviously, Karl is the hidden Crown Prince (see: the title).
