I’m no expert, but usually when horses have a blindfold/blinds on, it’s so that they don’t move on their own

It’s to keep flies out of their eyes and reduces their stress in uncomfortable environments by lowering the light intensity.

To. red moon: you probably won’t see this, but I think the blindfolding of the horse has something to do with it’s marks. In the first few chapters some guards were able to identify the rider because of the horses details.
